Our Certificate IV in Kitchen Management is an ideal program for individuals who aspire to own and manage their own food businesses. This course is also suitable for those who wish to acquire the necessary skills for managing a kitchen in a large hotel or restaurant, or for operating a small hotel or motel. Throughout the program, you will learn how to prepare a variety of dishes, including seafood, poultry, and pastry dishes.

Additionally, you will gain valuable management skills such as rostering staff and preparing and managing budgets. Our program has been specifically designed to provide students with a comprehensive understanding of the food industry and the skills required to operate a successful food business.

Entry Requirements

  • be at least 18 years of age and have completed the equivalent of Year 10

  • have an IELTS* score of 6.0 (test results must be no more than 2 years old).

  • English language competence can also be demonstrated through documented evidence like, educated for 3 years in an English-speaking country; or successful completion of an English Placement Test at IELTS 6.0.

  • successful completion of at least Certificate III level AQF qualification delivered in English

  • satisfactory completion of ELICOS course to upper intermediate or higher

    *Note that other English language tests such as PTE and TOEFL can be accepted. Students are required to provide the results so that we can confirm they are equivalent to IELTS 6.0.

Training Arrangement

Students are expected to attend classes for a total of 14 hours per week, along with an additional 6hours of structured online study. Furthermore, students are required to dedicate approximately 5 hours per week to additional study, which includes general reading and research for assessments.

Course Fees

Enrolment fee: $300 (non-refundable to be paid on application)

Material fees : $1200

Assessment Method

Assessment is structured throughout the course. If students are unable to achieve competency, additional support is provided through mentoring and access to re-assessment as outlined in our policies and procedures. Western Star Academy will assist students to find a work placement. However, students may also organise their own work placements. Student work placement will be discussed in detail once student starts course.Assessment requires achievement across all tasks to demonstrate competence and includes:

  • Direct Observation: Students may be observed in simulated off-the-job situations that closely resemble real workplace scenarios.

  • Product-Based Methods: Assessment includes reports, displays, work samples, role plays, and presentations created by students.

  • Portfolio: Students compile written documents, photographs, videos, or logbooks to showcase their learning and progress.

  • Questioning: Assessment involves written or oral questioning, as well as conducting interviews and surveys to evaluate student knowledge and understanding.

Course Credit

Student can apply for recognition of existing qualifications or skills, knowledge and experience (credit transfer or recognition of prior learning. If student is granted course credit, this will affect course fees as well as the duration of the course. College will advise student in writing of changes to fees or course duration as a result of the credit. Student will also be issued with a new Confirmation of Enrolment.
